When I bought the 86 cabrio I was told the engine had seized up
But it turns over and fired up, leaked antifreeze everywhere,
I think a freeze plug blew out, called our local mk1-2 expert
He says in the 20 yrs he's been a vw mechanic, he's not seen a
1.8 8v dead... Is it possible it's just a plug?

A freeze plug or the proper name core plug is designed to push out if the coolant freezes to save damage to the engine block. Just replace the core plug(s) and without using any special cooling system test equipment make should it hold coolant. Make sure it doesn't loose any coolant after you give it a run around to build up the temperature.
