Default Jetta 2015 1.8t Coolant always low i almost already changed the whole cooling system

Hi guys im new here and i seek emergency help. I purchased a 2015 jetta with 76k miles and i already put around 10k more to it, since the start it had the temperature light coming on indicating it is low on coolant. At first we changed the water pump, the thermostat and the case (sorry i forgot the name of the part that joins them), the mecanic told us the coolant was leaking through a gap between the water pump and something else, after changing those parts the problem was solved for a week, until i got the light on again and started pouring coolant every now and then when it needed it, until one day i poured almost the whole tank of coolant and next day it was gone. At the same time the engine started stalling and we took it to the same mecanic and told us it was because of the ignition coils 1 and 2 so he changed them but little did i know it was necessary to change them all at the same time when a car has that high of a mileage. At the same time he changed the expansion tank for the coolant because it appeared that it was leaking pressure, today i got the engine stalling when im at 60 mph so i figured i gotta change the other ignition coils also and the coolant is still leaking. Whenever i open the coolant tank, coolant comes up. Im sure there is no coolant leaking to the box because there is no liquid coming out of the exhaust or anything. Guys i really need your help with this coolant problem, i will still make the mecanic check on the ignition coils tomorrow and change them right away. But i need help with the other issue. There is no evident leak coming from nowhere, no liquid apart from water from the ac on the floor. Where could it be going or where could it be leaking, anyone had the same problem? What was the solution? I would really appreciate if you guys read all of this and an answer from you would be very appreciated
