I'm currently driving a Honda Civic, but thinking about changing to a VW Golf Mk 3
What would be the best choice for upgrading later on, a 2.0 GTI or a 2.8 VR6
And if there are any what are (big) differences between these 2 models.

Without a doubt, take the VR6, clearly the larger engine and extra 2 cylinders will supply more power.
However, if you find that a 2.0 is significantly cheaper, take that, then plan on a swap, to either a 1.8T, or 2.0T. I currently have a 2.slow and am very anxious for a swap for more power. If you want to avoid the expensive, but educational swap, stick with the VR6.

The 2.0 pushes 115hp stock, while the VR6 is reaching around 170hp... large difference.
1.8T gives from 150hp-180hp (Depending on year)
2.0T 197hp (Found in a mk5 gti)
If you want big power, 3.2 and 3.6 VR6 are available, from 217hp-276hp, but with larger costs of course.

It's all up to you.
Between your two options, VR6 is probably a better idea
