Ok whilst driving my 1.8T wagon home today I noticed that my temp gauge was showing different temperature readings, fluctuating between 50-90c during normal driving conditions.
I have recently replaced the engine coolant sensor, and all has been alright for the last couple of months.
Does this sensor operate the temp gauge?

Any help would be great.
