99 beetle doesnt always overheat

My daughter has a 99 betle, drive it 80 mph for 30 minutes no problem, drive it 80mh for 1 hour the red water light starts flashing and when she pull's over the radiator starts dumping water.

Any suggestions, had the timing belt replaced and I want and hope they changed the water pump at that time.

Any suggestions, it doesnt have an issue unless she drives distance.

Is the water pump leaking? Have you replaced the thermostat??

NO leaks, actually the coolings fans turn off when she switched the a/c off, so therfore the car gets hot, and the dummy light comes on, Would that be the switch loctaed under the battery(fan controller switch)?
