2007 beetle coolant sensor

hey guys, my coolant sensor is going off whenever i start up the engine and it is completely cold. I'm positive it is a bad sensor that is just not reacting well to the winter (it started about a month or so ago as the temperature really started to drop around here). I had it in at the dealer a couple weeks back (for an oil change) and they didn't find anything right off the bat (as the engine was already warmed up as I obviously just drove it to get there) .I don't have the cash at the moment to take it in to get it replaced by them.

Is this something that I can replace on my own? (i'm really handy with that sort of thing.) If so, anyone know where I can pick one up, and how to replace it?

Thanks!

well, it's lighting up red, when i initially turn it on, then goes away after a minute or two.

it's definitely not overheating as the engine is dead cold when it does this. and the coolant level is fine, when i was in for an oil change like 3-4 weeks ago, they topped it up, and it made no difference.
